Abstract:
The successful development and commercialization of new technologies applied to food requires good understanding of the attitudes of consumers to technology in general, and to food technologies in particular. To date, however, very limited empirical research has been undertaken on the concerns that consumers have about food technologies and the benefits that they perceive to be associated with the application of these technologies in food production and processing. This seminar reports the results of an in-depth study of the attitudes of Canadian consumers to a range of food and non food technologies, which reveals how the acceptability of particular technologies relates to the interplay of perceived risks and benefits. The implications for innovation and commercialization in the food sector are discussed.
